PICKLE MAYONNAISE

Ingredients

1 bag commercial tater tots (approx. 650g)

1 whole lemon

¼ cup Silly Billy pickle mayonnaise

¼ cup sour cream

1 tbsp. Silly Billy pickle sauce

1 tbsp. Dijon mustard

1 tbsp. apple cider vinegar

1 tbsp. chopped fresh chives

1 Lebanese cucumber, thinly sliced

A dozen radishes, thinly sliced
 

Preheat oven to 450ºF. 

Transfer potatoes to a large baking sheet. Bake for 8 minutes or until tender-crisp. Using a spatula, lightly crush each tater tot. Return to the oven for a further 15-20 minutes, or until the potatoes are golden brown and crisp. 

While the potatoes are cooking, remove the skin from the lemon as if making supremes. Slice, then cut each slice into small pieces.

In a bowl, combine mayonnaise, sour cream, pickle sauce, mustard and vinegar. Add chives, cucumber, radishes, lemon pieces and tater tots. Toss to coat well.
