Beef Crostinis

  • Mayonnaise aux cornichons


Ingredients


  • 454 g (1 lb) steak, at room temperature

  • 5 ml (1 teaspoon) fleur de sel

  • 2.5 ml (½ teaspoon) freshly ground pepper

  • 2.5 ml (½ teaspoon) garlic powder

  • 60 ml (¼ cup) unsalted butter

  • 30 ml (2 tablespoons) fresh garlic, minced

  • 2 sprigs fresh rosemary

  • 1 baguette, sliced

  • 1.8 oz (45 ml) olive oil

  • 5.5 oz (150 g) garlic and herb cream cheese

  • Balsamic cream, to taste

  • Spicy pickle mayonnaise, to taste


Preparation


  1. Cut the steak into small, uniform cubes. Place in a bowl, then season with fleur de sel, pepper, and garlic powder.

  2. Heat a large cast iron skillet over medium-high heat. Melt 1 tablespoon (15 mL) of butter and spread the beef cubes in a single layer. Cook the meat for a few minutes on each side until nicely browned. Set the beef aside on a plate.

  3. Over low heat, in the pan used to cook the meat, add the remaining butter, garlic, and fresh rosemary. Stir until the mixture releases its aromas and forms a fragrant sauce.

  4. Return the steak pieces to the pan and coat them well with the garlic and rosemary butter. Cover with aluminum foil and set aside.

  5. Preheat the oven broiler. Place the baguette slices on a baking sheet and drizzle with olive oil. Broil for 3 minutes or until golden brown and crispy.

  6. Spread garlic and herb cream cheese on each bread crouton. Add a few cubes of beef and garnish with a drizzle of balsamic cream.

  7. Add a drizzle of spicy pickle mayonnaise to each bite and serve immediately, while the beef is still warm.
