Caesar-style potato salad

Silly Billy product used :


  • Pickle mayo


Ingredients


Salad:

  • 1 2 lb bag of baby potatoes

  • 1 head of romaine lettuce, washed and chopped

  • 4 to 6 slices of cooked bacon, coarsely chopped

  • ½ cup of shaved Parmesan cheese

  • ½ cup of croutons, homemade or store-bought


For the dressing:

  • ½ cup of Silly Billy pickle mayonnaise

  • 1 small clove garlic, finely chopped

  • 1 tbsp sugar

  • 1 tbsp chopped capers

  • ½ tsp Worcestershire sauce

  • Salt and pepper to taste


Preparation


  1. Bring a pot of salted water to a boil and cook the potatoes for about 10 to 15 minutes, until tender. Drain, then cut the potatoes in half.

  2. In a bowl, combine all the ingredients for the dressing.

  3. Place the potatoes in a salad bowl, then add the dressing. Toss to coat the potatoes evenly.

  4. Add all the other ingredients, mix well, and serve.
