Crispy ramen salad

Silly Billy product used :


  • Pickle Sriracha


Ingredients


Salad:

  • 1 cup broccoli florets

  • 1 red bell pepper, cut into thin strips

  • 2 carrots, peeled and julienned

  • ½ to 1 cup edamame

  • 1 green onion, sliced

  • ¼ cup coarsely chopped peanuts

  • ¼ cup chopped cilantro

  • Salt and pepper to taste


For the ramen noodles:

  • 4 tablespoons melted butter

  • 2 tablespoons brown sugar

  • 1 tablespoon Silly Billy's Sriracha Pickle Sauce

  • 2 teaspoons tamari sauce

  • ½ teaspoon onion powder

  • ½ teaspoon garlic powder

  • 2 packages ramen noodles with seasoning, broken into small pieces (vegetarian or chicken)


For the dressing:

  • The two seasoning packets from the ramen packages

  • Juice of two limes

  • 6 tablespoons honey

  • 4 tablespoons Japanese mayonnaise

  • 2 to 3 tablespoons Silly Billy's pickle sriracha


Preparation


  1. Preheat the oven to 350°F and line a baking sheet with parchment paper. Set aside.

  2. In a small bowl, whisk together all the ingredients for the ramen noodles, except for the noodles.

  3. Add the noodles and mix well to coat.

  4. Spread on a baking sheet and bake for about 10 to 15 minutes, turning halfway through cooking, until the noodles are golden brown. Let cool completely.

  5. In a salad bowl, combine all the ingredients for the salad. Season to taste, then add the crispy noodles.

  6. In a small bowl, combine the ingredients for the dressing.

  7. Drizzle the salad with dressing and serve.
