Pickle mayo and pickledip
Ingredients
Coleslaw:
60 ml (¼ cup) pickle mayonnaise
30 ml (2 tablespoons) pickle sauce
5 ml (1 teaspoon) white vinegar
5 ml (1 teaspoon) sugar
2.5 ml (½ teaspoon) dried parsley
Salt and pepper to taste
750 ml (3 cups) shredded Savoy cabbage
1 medium carrot, thinly julienned
Hot pulled pork sandwiches:
4 sandwich rolls (baguette, ciabatta, or other) toasted
125 ml (½ cup) pickle mayonnaise
500 ml (2 cups) hot pulled pork
125 ml (½ cup) pickle sauce
8 slices pickled dill pickles
Preparation
In a bowl, whisk together the pickle mayonnaise, pickle sauce, white vinegar, sugar, dried parsley, salt, and pepper.
In a large bowl, combine the cabbage and carrots before adding the creamy sauce. Mix well and refrigerate for 1 hour.
Spread the sandwich buns with pickle mayonnaise, top with warm pulled pork, pickle sauce, sliced pickles, and coleslaw. Close the sandwiches and serve immediately.
