Lemon Granita with Pickle Vodka

Ingredients

  • 500 ml (2 cups) water

  • 180 ml (¾ cup) granulated sugar

  • 180 ml (¾ cup) lemon juice

  • 2.5 ml (½ tsp) lemon zest

  • 125 ml (½ cup) pickle vodka

  • 30 ml (2 tbsp) finely diced dill pickles

  • Fresh mint, to taste


Preparation

  1. In a small saucepan, combine the water and granulated sugar. Heat over medium heat, stirring until the sugar is completely dissolved. Remove from the heat.

  2. Add the lemon juice, lemon zest, and pickle vodka. Stir to combine, then let cool completely.

  3. Pour the mixture into a shallow dish. Cover and freeze for 3 hours.

  4. Scrape and stir the mixture with a fork to form ice crystals. Return to the freezer and repeat every hour for 4 to 5 hours, or until the granita reaches the desired texture.

  5. Divide the granita among glasses or dessert cups and serve immediately, garnished with a fresh mint leaf.
