Salmon and pickle tartare

Silly Billy product used :


  • Pickle Mayonnaise and pickle sriracha


Ingredients


  • 700 g fresh salmon, diced

  • 80 ml (⅓ cup) chopped French shallots

  • 60 ml (¼ cup) chopped pickled dill pickles

  • 30 ml (2 tablespoons) chopped capers

  • 30 ml (2 tablespoons) pickle mayonnaise

  • 15 ml (1 tbsp) pickle mustard

  • 15 ml (1 tbsp) pickle sriracha

  • 15 ml (1 tbsp) fresh lemon juice

  • 15 ml (1 tbsp) olive oil

  • 15 ml (1 tablespoon) chopped fresh dill

  • 5 ml (1 teaspoon) lemon zest

  • Salt and pepper to taste


Preparation


  1. In a large bowl, combine all the ingredients for the salmon tartare. For optimal flavor, let the tartare rest in the refrigerator for 30 minutes.

  2. Shape the tartares using a cookie cutter or ramekin.

  3. Serve immediately with croutons, salad, or shoestring fries.
