Salmon and pickle tartare

Pickle Mayonnaise and pickle sriracha
Ingredients
700 g fresh salmon, diced
80 ml (⅓ cup) chopped French shallots
60 ml (¼ cup) chopped pickled dill pickles
30 ml (2 tablespoons) chopped capers
30 ml (2 tablespoons) pickle mayonnaise
15 ml (1 tbsp) pickle mustard
15 ml (1 tbsp) pickle sriracha
15 ml (1 tbsp) fresh lemon juice
15 ml (1 tbsp) olive oil
15 ml (1 tablespoon) chopped fresh dill
5 ml (1 teaspoon) lemon zest
Salt and pepper to taste
Preparation
In a large bowl, combine all the ingredients for the salmon tartare. For optimal flavor, let the tartare rest in the refrigerator for 30 minutes.
Shape the tartares using a cookie cutter or ramekin.
Serve immediately with croutons, salad, or shoestring fries.
