Tropical shrimp poke bowl

  • Pickle Sriracha


Ingredients


  • 1 cup white rice (Japanese or medium grain)

  • 1 cup cooked and peeled shrimp

  • 1 cup chopped curly lettuce

  • 1 orange bell pepper

  • 1 cup shredded red cabbage

  • 1 cup diced pineapple

  • 2 Lebanese cucumbers

  • 1 cup frozen edamame in pods

  • 2 avocados

  • 1 lime

  • 2 tablespoons Sriracha Oh Silly Billy


Preparation


  1. Rinse 1 cup of rice in cold water until the water runs clear. Place the rice in a saucepan with 1 1/2 cups of water, cover, and bring to a boil.

  2. Reduce heat to low and cook for 10 to 12 minutes until all the water has been absorbed. Remove from heat, cover and let stand for 10 minutes, then fluff the rice with a fork and let cool.

  3. While the rice is cooking, chop the lettuce, cut the bell pepper into strips, shred the red cabbage, slice the cucumbers into rounds, and dice the pineapple. Slice the avocados just before assembling to prevent them from browning.

  4. Boil 1 cup of edamame in salted water for 3 minutes, drain and shell them.

  5. Divide the cooled rice between 4 bowls. Arrange the shrimp, lettuce, bell pepper, red cabbage, cucumbers, pineapple, and avocado slices on top of the rice. Add the shelled edamame beans.

  6. Squeeze a little lime juice into each bowl, add a dash of Silly Billy sriracha, and serve immediately.
