Salad of beets, feta, and dill

  • Pickle Mustard


Ingredients


Salad:

  • 4 large (or 8 small) pre-cooked beets, cut into wedges

  • ½ cup crumbled feta cheese

  • ¼ cup chopped dill

  • 2 tablespoons coarsely chopped pistachios

  • 2 tablespoons chopped parsley


For the dressing

  • 3 tablespoons Silly Billy's pickle mustard

  • 1 tablespoon neutral oil

  • 1 tablespoon red wine vinegar

  • 1.5 tablespoons honey


Preparation


  1. In a small bowl, whisk together all the ingredients for the dressing. Set aside.

  2. In a salad bowl, mix all the ingredients together.

  3. Add the dressing and toss to coat the ingredients. Serve.
