Smoked salmon and grébiche sauce by Genco

Silly Billy product used :


  • Pickle Mayo


Ingredients


  • 50 ml pickle mayonnaise

  • Pinch of salt

  • Pinch of pepper

  • 2 hard-boiled eggs

  • 30 g diced pickles

  • 20 g chives

  • 1 lemon

  • 300 g smoked salmon


Préparation


  1. Mash the hard-boiled eggs with a fork. Finely dice the pickles (sweet or salty). Cut the lemon in half and squeeze the juice from one half.

  2. Mix together the lemon juice, pickle mayonnaise, crushed eggs, diced pickles, chives, salt, and pepper.

  3. Spread the sauce on the bottom of a plate, cover with smoked salmon, and serve! (with croutons or blinis)
